The five dinners

  1. Sheet-pan chicken and vegetables. Toss chicken thighs and chopped vegetables in oil and salt, spread them out so nothing is crowded, and roast at 425 degrees Fahrenheit until the chicken reads 165 degrees inside. It teaches roasting and spacing.
  2. Pasta with a quick tomato sauce. Soften garlic in olive oil, add canned crushed tomatoes and salt, simmer 15 minutes, and toss with pasta cooked in well-salted water. It teaches sauce and seasoning.
  3. Stir-fry over rice. Cut everything before you start, get the pan very hot, cook the protein, then the vegetables, then a splash of sauce. It teaches heat control and prep, and pairs with rice on the stove.
  4. Tacos. Brown ground meat or warm beans with onion and spices, and set out tortillas and toppings. Ground meat cooks to 160 degrees.
  5. Chili. Brown meat or use beans, add onion, spices, tomatoes and beans, and simmer at least 45 minutes. It feeds you for days and freezes well.

A worked week

Here is how the five fit a real week with one shop. Buy a pack of chicken thighs, ground meat or beans, onions, garlic, canned tomatoes, pasta, rice, tortillas, a few vegetables and a jar of spices. Sunday is the sheet-pan chicken, and you roast extra for Monday's lunch. Tuesday is tacos. Wednesday is pasta. Thursday is a stir-fry with the last of the vegetables over rice. Saturday is chili, with enough left over to freeze two portions. One onion bag, one garlic head and one pack of canned tomatoes run through four of the five meals, which is what keeps the grocery bill down.

Cooking for other people

Kitchen safety in one paragraph

Keep a lid within reach whenever you fry. If oil catches fire, turn off the burner and slide the lid over the pan; never use water, and never carry the pan. Keep knives sharp and use the claw grip.
