How to do it

  1. Pick one grain, one protein and two vegetables you will not be tired of by Thursday.
  2. Start the grain first, since it takes longest without attention.
  3. Roast the vegetables and the protein on sheet pans in the oven at the same time.
  4. Spread the cooked food in shallow containers so it cools fast, and get it into the fridge within two hours.
  5. Portion into lunch containers, keeping sauces and crunchy toppings separate so nothing goes soggy.
  6. Label the containers with the day, eat the first three or four days, and freeze Friday's portion.
  7. Reheat until steaming all the way through, stirring halfway.

Common mistakes

  • Cooking one flavor for seven days and giving up by Wednesday.
  • Cooling a big hot batch in one deep pot in the fridge.
  • Keeping cooked lunches in the fridge for a full week.
  • Dressing salads in advance.
